Caprese Pizza Pockets

Fun to eat and easy to make!

Ingredients
  • 2 Gilbert’s Caprese Chicken Sausages, cut into small rounds
  • 1 tube of store-bought pizza dough
  • Pizza sauce or marinara
  • Shredded mozzarella cheese
  • Other pizza toppings, as desired, such as peppers, spinach, olives, etc.
  • 1 egg, lightly beaten
  • Italian seasoning
Instructions
  1. Preheat oven to the temperature listed on the pizza dough.  
  2. Open the pizza dough and roll into a thin rectangle.  Cut into 6 equal pieces.  Once the pieces are cut, it may be easier to roll each piece out a little more -- each piece should be a 5-6 inch square.
  3. Leaving a ¼ inch border, spoon a little marinara sauce onto half of each piece of dough.  Top with sausage, a sprinkle of mozzarella, and any additional toppings.  Fold the dough over so the seams meet.
  4. Place on a parchment-lined baking sheet and brush the dough with the egg.  Sprinkle with extra mozzarella cheese and some Italian seasoning.  
  5. Bake according to the instructions on your pizza dough. Note: it may require a few additional minutes since the dough is stuffed - watch closely and cook until golden brown.  Serve with extra marinara for dipping—enjoy!
