Sweet Potato Hash with Sausage, Apples & Brussels Sprouts

Ingredients
  • 1 package Gilbert's Craft Sausages Bourbon Apple Chicken Sausage, cut into ¼ inch slices
  • 1 medium sweet potato, diced into ½ inch cubes (mine was 10oz)
  • ½ lb brussels sprouts, quartered
  • 2 small apples, diced into ½ inch cubes (I used fuji)
  • 4 tsp olive oil, divided
  • ½ tsp dried sage
  • ¼ tsp dried thyme
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ½ tsp salt, plus more to taste, if needed
  • ¼ tsp pepper, plus more to taste, if needed
Instructions
  1. Heat a large heavy skillet over medium heat. Add 2 tsp of olive oil and the sweet potato.
  2. Cook sweet potato, stirring occasionally, for 5 minutes, until the outside starts to brown. Turn heat to low, add in ⅓ c water, cover and cook for 3-4 minutes, so that the sweet potato begins to soften.
  3. Uncover and add in the brussels sprouts, sausage, apples, and all of the spices. Drizzle with 2 tsp olive oil and stir until everything is well combined.
  4. Return heat to medium and cook, stirring occasionally, for about 5 minutes.
  5. Apples should soften and the brussels sprouts and sausages should start to become brown and caramelized. If veggies are not fully cooked after 5 minutes add ⅓ c of water, turn heat to low, and cover for 3-4 minutes longer.
  6. Season with salt and pepper to taste. Enjoy!
