A lot of people wonder why our sausages are fresher tasting and juicier than other chicken sausages. It’s all about sous vide. Our craft process isn’t the fastest or easiest way to make sausage, but the benefits speak for themselves.

Our Products


All Gilbert's Craft Sausages are fully cooked sous vide and are ready to eat. Each link is vacuum-sealed then heated to a food safe temperature, so your sausages are never exposed to the outside environment until you open them.

This process keeps our individually-wrapped links fresh in the fridge. You can open only what you need - no "sniff test" or guessing whether uneaten links are still safe to eat. You can even warm a link in its microwave-safe / BPA-free packaging.

Our low-temperature sous vide process means a better-tasting sausage. By eliminating oxygen from the packaging and sealing in flavor, we minimize oxidation, which affects texture, nutrition, and gives other pre-cooked sausages an "off" flavor.
